    What are you topping this with?

    Peach filling-
    •8 cups ripe peaches, peeled & sliced (about 6–7 large peaches or 3 lbs)
    •¾ cup granulated sugar (adjust if peaches are very sweet/less ripe)
    •2 tbsp brown sugar (adds depth)
    •3 tbsp cornstarch
    •1 tsp cinnamon
    •¼ tsp nutmeg (optional)
    •1 tbsp lemon juice
    •1 tsp vanilla bean paste
    •Pinch of salt

    BISCUIT TOPPING
    •1 ¼ cups all-purpose flour
    •¼ cup granulated sugar
    •1 ½ tsp baking powder
    •½ tsp baking soda
    •½ tsp salt
    •6 tbsp cold unsalted butter, cubed
    •½ cup Cold buttermilk (or whole milk + 1 tsp vinegar)
    •½ tsp vanilla extract (optional)
    •1 tbsp coarse sugar (for sprinkling)

    Bake at 350F for 30-40 minutes

  2. I made this tonight, and OMGOODNESS IT IS THE BEST PEACH COBBLER I'VE EVER HAD!!! Even my daughter in law that has never eaten peaches raved about it. She said it smelled so good she had to try it! ❤ This one is going in my book of favs.. now on to your blueberry pie. I'm so excited for it too! You are amazing, Josè.. absolutely Fantabulous!! 🧡🙏💜🔥
