Chicken Steam Written Recipe With directions

Ingredients For Steam Chicken:

-Chicken with bone 2 Kg big pieces
-White Vinegar (sirka) 5 tbs
-Salt (namak) 2 tbs
-Black pepper corns (sabut kali mirch) 1 tbs
-Dried Corianader (khushk sabut dhania) 1 ½ tbs
-Cumin seeds (zeera) 1 ½ tbs
-Cinnamon stick (Dar chini) 1 inch
-Red chili flakes (adh khuti lal mirch) 1 tbs
-Yogurt (dahi) without water 1 cup
-Carom seeds (ajwaian) ¼ tsp
-Red chili (lal mirch) powder 1 tbs
-Salt (namak) 1 tbs
-Ginger garlic (adrak lehsan) paste 1 tbs
-Lemon (nimbu) juice 1 ½ tbs
-Mustard paste or powder 1 tsp
-Green chilies (hari mirch) chopped 4
-Tomato ketchup 1 tbs
-Yellow food color ¼ tsp
-White sesame seeds (Safaid til) as required
-Lemons (nimbu) sliced
-Ginger (Adrak) Julienne
-Fennel seeds (sonf) 1 tbs
-Star anise(Badiyan k phool) 2
-Mace (Javatri) 1
-Cinnamon stick (Dar chini) 1
-Black cardamom (badi elaichi) 2
-Green cardamom (Choti elaichi) 2-3
-Cloves (Laung) 3-4
-Bay leaves (Taz patta) 2
-Cooking oil 1 tbs

Ingredients For Chutney:

-Tomatoes (tamatar) 6 cut them into two equal halves
-Cooking oil 2 tbs
-Salt (namak) as required or to taste
-Water (pani) as required
-Cooking oil 2 tbs
-Cumin seeds (zeera) as required
-Garlic (lehsan) cloves chopped 5-6
-Onion (piyaz) chopped 2 tbs
-Green chilies (hari mirch) chopped 4
-Kashmiri red chili (lal mirch) ¼ tbs
-Fresh coriander (dhania) chopped

Ingredients For Chapati:

-All-purpose flour (maida) 1 cup
-Wheat flour (atta) ½ cup
-Carom seeds (Ajwaian) ¼ tsp
-Turmeric (haldi) powder ¼ tsp
-Red chili flakes (adh khuti lal mirch) ¼ tsp
-Salt (namak) to taste
-Green chilies (hari mirch) chopped
-Onion (piyaz) chopped
-Fresh Coriander (hara dhania) chopped
-Water (pani) 1 ½ cup
-Cooking oil/ clarified butter (ghee)

Directions For Steam Chicken:

-Add marks/cuts on chicken.
-In a bowl, add water, vinegar, salt & mix well.
-Add chicken and mix well, cover & let it rest for 30 minutes then strain & set aside.
-In a pan, add cooking oil and heat it on high flame.
-Then add chicken and fry it on high flame for 3-4 mins until light golden. Set aside and let it cool.
– In a spice mixes, add black pepper corns, dried coriander, cumin seeds, cinnamon sticks, and red chili flakes. Slightly Grind them.
-In a bowl, add yogurt, carom seeds, red chili powder, salt, ginger garlic paste, lemon juice, mustard paste, green chilies, tomato ketchup, yellow food color, and prepared ground mixed spices. Mix well.
-Add the fry chicken. Cover and marinate it for 1 hour. Keep it in refrigerator.
-In a pressure cooker, add water, fennel seeds, star anise, mace, cinnamon stick, black cardamom, green cardamom, cloves, bay leaves, and cooking oil.
-Then place a steamer over it & line with aluminum foil. Make holes in aluminum foil.
-Add marinated chicken pieces. Sprinkle white sesame seeds and lemon.
-Place butter paper over it. Cover and cook it for 3 mins on high flame and 20 mins on low flame (dum flame).
-Dish out, garnish it with onions and lemon.
-Serve with chutney and chapati. Enjoy!

Directions for chutney

-In a pan, add cooking oil
-Add tomatoes, sprinkle salt on it. Cover and roast them for 4-5 mins on medium flame.
-Remove the skin of tomatoes.
-In a spice mixes, add roasted tomatoes and water. Grind well to make a paste.
-In a pan, add cooking oil and heat it. Then, add cumin seeds and garlic. Mix well and cook it for 1 min on medium flame.
-Then, add tomatoes paste, onion, green chilies, water, salt. Mix well and cook it for 3-4 mins on medium flame.
-Add Kashmiri red chili and fresh coriander. Mix well.
-Bring it out to a bowl and let it cool.

Directions For Chapati:

-In a bowl, add all-purpose flour, wheat flour, carom seeds, turmeric powder, red chili flakes, salt, green chilies, onion, and fresh coriander. Add 1 cup water and mix well with hand beater. Then , add ½ cup more water and mix well with hand beater.
-Grease the pan with cooking oil/clarified butter and heat it on low (Dum flame).
-Add prepared batter and cook one side of bread for 2-3 mins then change the side of bread, apply cooking oil and cook it for 2-3 mins. Similarly make others.

Tips and Tricks:

-You can also use steamer instead of pressure cooker.
-The total cooking time in steamer is 30-35 mins.
