Adding a little vinegar (pickle juice) to any milk essentially turns it into buttermilk for a lot cheaper. L&L in Austin uses pickle juice (they used to use buttermilk on the food truck but it's cost prohibitive in the brick and mortar and they make tons fresh pickles to repurpose the juice from anyway) with seasonings for brining their chicken before a glaze is added towards the end. They have a Michelin Star lol
