I have seen a recipe where they don’t cook the brine but just mix it all and use cold.
Fermented veggies are good for us!!
A good friend of mine made a small batch of Pozole for our house this Christmas. He told us to add the pickled red onions as a garnish. Man, all I can say is that it gave the Pozole a very clean and elegant taste.

What size jar and how many onions for this recipe??
I make them all the time! Addictive! I like to add some 'warm' spices once in a while – clove or allspice or nutmeg. Yummy!

Zero reason to specify kosher salt.
Rice wine or rice vinegar?
I use red grape vinegar to make pickled onions.
Is the sugar for taste only (in which case I could substitute allulose) or does it serve some other purpose such as texture or preservation?
Does it have to be sugar can it be cellulose? Or monk fruit sweetener?
So easy. It would make a nice little food gift.😊
