  1. Ingredient List:

    To Rub the Liver

    400g of pig liver, sliced thinly

    1/4 cup of all-purpose flour

    1/4 cup of Chinese cooking wine

    To Marinade the Liver

    1/4 tsp of salt

    1.5 tsp of dark soy sauce

    1 tsp of grated ginger

    1 tbsp of Chinese cooking wine

    3 tbsp of cornstarch

    To Make the Stir Fry Sauce

    1/2 tbsp of soy sauce

    1/2 tbsp of oyster sauce

    1/2 tbsp of dark soy sauce

    1/2 tbsp of sesame oil

    Others:

    3 tbsp of cooking oil

    6 cloves or garlic, sliced thinly

    2 inches of ginger, julienned

    2 green chilies, cut into bite size

    8 Thai bird eye chilies, diced

    1/2 cup of dried red chilies, cut open to release the flavor

    1.5 tsp of Sichuan peppercorns

    2 scallions, cut into 1.5-inch stalks, separate the green and white part

    1.5 cups of basil leaves

  2. We are Mexican, my mother makes it with onion rarely since we dont love it, but it is good with caramelized onions and a good spicy salsa and a tortilla. Ig this would be even better from all the aromatics and methods used to mask the flavor/cleanse it of bad flavor.
