Pita Bread Recipe:

Maida (All Purpose Flour) – 2 ¼ Cup
Wheat Flour (Atta) – ½ Cup
Salt – 1 tsp
Sugar – 1 tbsp
Water (lukewarm) – 1 Cup
Instant Yeast – 2 tsp
Olive Oil – 1 tbsp + For Greasing

Cooking Instructions:

1. Add the yeast and sugar in the lukewarm water and mix well.

2. Combine the salt, maida, and wheat flour in a bowl.

3. Add the olive oil and the yeast mixture, mix with a spoon and then tip the mixture on to a work surface.

4. Knead the dough for 10 mins continuously until smooth and elastic.

5. Apply oil and place in a covered bowl to proof for 2 hours.

6. Divide the dough into roundels and roll out the pita as thin as possible.

7. Rest the pita covered for 10 mins.

8. Cook the pita on a medium-low tava, flipping them twice.

9. The bread will puff up with an air pocket in the middle, ideally.

10. Store covered in a bowl, covered with a cloth.

11. Can be stored for 3 days in the fridge.

Cooking Tips:

1. The dough must be slightly sticky.

2. Proofing for 2 hours then rest after rolling is essential.

3. Cooking on a medium-high flame is the key to a puffed pita without getting too dark.

4. Press gently with the spatula to aid the inflation.
