Why do I feel like I was just on a roller coaster?
This has quickly become one of my favorite recipes. Uses only a handful of commonly available ingredients, inexpensive, no chopping and prep work, just dump everything into the bowl and mix, minimal amount of dishes to clean up, very simple to do, no special skills required, impossible to overcook or undercook, no babysitting over the stove, tender, has a gorgeous color, and very rich in flavor (sweet, sour, spicy, savory).
And you don't even need an anchovy.
This looks amazing. I neeeeed the potato recipe, plus another good veggie to add as a side. Thinking a balsamic roasted brussel sprout or honey glaze balsamic carrots? Suggestions welcome.
For those who don't want to do the mashed up anchovy filet, use anchovy paste, which will last for a good while in the fridge and is very versatile. We use it in our home made pizza and pasta sauces. It is subtle but amazing if you use it in the right quantity.
This recipe was outstanding. I will say, I tripled the garlic. Next time, I think I will use shallot instead of the green onion. But wow. I served it over Chef John’s perfect polenta, which was, indeed, perfect. Will make again soon.

I made this tonight and it was honestly one of THE BEST new recipes I have made in the last 2 years!!! I cut some of the spices in half, and increased the honey. I can’t wait to try this again! Gonna make it with chicken.

I also served it on Ricotta Mashed Potatoes, didn’t need a recipe on this, just boiled potatoes, hunk of butter a couple of tablespoons of ricotta and whipped the bejesus out of it with a hand mixer. Just Devine!

Chef John, would this braise be ok with pork tenderloin or not enough connective tissue?
I made this, but I only had pork tenderloin. It came out pretty good, and it cooked faster than pork shoulder at 325 F. I should have made more sauce to drizzle over it and the rice after it cooked. Will do that next time.
Trying this now with one difference: I'm marinating this pork for 2 days beforehand

Just made the marinade and the pork is happily soaking it up, forgot anchovies on my grocery order the other day so going without. Have made this several times, easy and amazing as well as cheap.

Swap the balsamic for a good Pinot Blanc/Pinot Gris vinegar, the rosemary for tarragon, and add some sultanas, and this recipe is perfect for grilled fish too. I've used it a dozen times. It's my staple agrodulce recipe now.
tried it and it was hard as a rock
I made this dish (7/29/19), following the recipe closely. The end result was an over-spiced and over cooked dish. So far, I’ve made 24 of Chef John’s recipes and have been very pleased. I probably did something wrong (I think I cut the meat into pieces that were too small.) My wife and I tried to eat this, but ended up feeding it to the garbage disposal, instead.
I'll be doing this with chicken legs and thighs as I forgot to pull my pork roast out of the frezzer

This looks crazy delicious! Think I’ll make it tonight. Ricotta mashed potatoes are usually very similar to regular mp recipes, except you swap out 1 cup of whole milk with 1 cup of ricotta and 1/2 cup of heavy cream. Use Yukon instead of russet to aid the creaminess of the ricotta. I like to add a little parm to mine as well.

Great recipe Chef John! This really is a summer and winter recipe at the same time lol. We're having this for dinner today and it smells beautiful in the kitchen right now. I agree with you about using hands to mix because my dad who is a chef always says 'A chef's best tools is their clean bare hands' 🙂 Rosemary and roasted pork is such a delicious combo.
