🧅🥕INGREDIENTS🥕🧅
4 pork chop or pork cutlets
150 ml apple cider (beverage)
100 ml pure cream (heavy cream)
1 or 2 teaspoons calvados (optional)
4 apples (golden delicious or similar) Peeled, cored and finely sliced
20 gram butter (to cook the chops)
1 teaspoon grapeseed or sunflower oil ( to cook the chops)
30 grams butter to (cook the apples)
salt and pepper to season.

Cooking Time for the chops may vary depending on the thickness of the cuts you buy.

  2. hi, I just followed you on this dish and I must say it was beautiful. the sauce could have been better I used double cream which I thought might make it a bit thicker but it was still good, and I used calvados.

  3. Excellent flavour in the sauce but my cream separated out so I think it is better to take the jus off the heat before adding the cream. My jus also needed straining before I added the cream. I used Cognac instead of Calvados and it worked fine. I sliced the apple very thinly and it turned into a bit of a (tasty) mush so thicker slices might be better. very well received by the family.

  4. Forgive me if I've misunderstood, but are you saying that the pan-fat from the meat should be discarded? So delicious? I save even a spoonful of flavoured fat. For a roux, for an omelet, for a rice-bowl, for pan-fried potatoes, etc. etc. etc. I expect I have misunderstood…….

  5. Pork (salty) goes well against apple (sweet) if you get the balance right. It's easier the more fat is in the dish. The same goes for ham pancakes with syrup, salted macquerel filet, potato pancakes and lingonberry jam (which also has this tartness), and many more recipes.

  6. I made this dish tonight and now my wife is busy working out who to invite for dinner so that I make it again.
    It was, without doubt, one of the best pork dishes we have ever tasted. And it’s so easy to make.
