This looks delicious. What pork chop cut do you recommend? Should I use a shoulder, sirloin, or a center cut pork loin chop? I am thinking a sirloin or pork loin chop?
What a wonderful idea for a sauce! Even without the apples, just the pork, with butter, cream and cider? Perfect for when you come home from the pub!
Tried to make this one. It turned out really good.
Hi! New Zealand here. I'm looking forward to cooking this for sure! Would it be vulgar to add some thinly sliced button mushrooms to the sauce? And perhaps a touch of Garlic?
hi, I just followed you on this dish and I must say it was beautiful. the sauce could have been better I used double cream which I thought might make it a bit thicker but it was still good, and I used calvados.
Excellent flavour in the sauce but my cream separated out so I think it is better to take the jus off the heat before adding the cream. My jus also needed straining before I added the cream. I used Cognac instead of Calvados and it worked fine. I sliced the apple very thinly and it turned into a bit of a (tasty) mush so thicker slices might be better. very well received by the family.
Looks delicious. I'm trying this one.
C'est pour notre diner ce soir!
Incredibly simple, looks delicious!
Scrape the side of the pan. Scrape the side of the pan. Scrape the side of the pan.
May I ask? Why do you never seem to scrape down the sides of your pan when you make sauce? Everything else is explained, there must be a reason?
Love the youtube channel

Forgive me if I've misunderstood, but are you saying that the pan-fat from the meat should be discarded? So delicious? I save even a spoonful of flavoured fat. For a roux, for an omelet, for a rice-bowl, for pan-fried potatoes, etc. etc. etc. I expect I have misunderstood…….
Lovely youtube channel, so much enjoying it.

Apfelcorn would be useful for this.
what would u add as side dish ?
If I can’t find apple cider, can I use apple juice instead?
Just cooked this tonight…. So so good, glad I gave it a try
Pork (salty) goes well against apple (sweet) if you get the balance right. It's easier the more fat is in the dish. The same goes for ham pancakes with syrup, salted macquerel filet, potato pancakes and lingonberry jam (which also has this tartness), and many more recipes.
Scrumptious a wonderful combination 👌💯🇿🇦
Hmm.. am I the only one who can’t find apple cider at the supermarket? Never heard of it 😅 (am in Italy)
Made this for dinner today, a huge hit with the spouse!
I made this dish tonight and now my wife is busy working out who to invite for dinner so that I make it again.
It was, without doubt, one of the best pork dishes we have ever tasted. And it’s so easy to make.
Thank You.
Excelente, estoy encantada, pero será que pueden poner subtítulos en español, hay ingredientes que no sé que es, muchas gracias
I used this recipe as inspiration for a rabbit I shot. Delicious.

When I can't get cider I use Simply Apple juice, a cider like texture and not too sweet. Plus I couldn't find calvados so I used cognac instead and it was delicious.
Hats off to you. That was delicious.
Voilà! My favorite cooking channel, hands down. Love it! I have looked for something like this for so long — rooted in the classics of French cooking, but for the home chef. Merci beaucoup Stéphane. Trés bien!
This is an excellent channel. Well done monsieur!
Could this be done with Chicken instead? Would love to cook this for my mom, but she can't eat pork (She has rheuma, and one of the worst triggers is unfortunately pork)
I'm a vegetarian Muslim.
