I didn't see salt being added. I am guessing the fermented bamboo shoot is really salty? I have some dried shredded bamboo shoot that my friend brought for me from Nagaland. So wondering what to do with that and landed up here.

I've got fernented bamboo from my Vietnamese friend today. This recipe look great, very simple. Only salt and dry pepper and sichuan perpercorn… ginger and garlic. I have all this in my kitchen, I'll try this tomorrow. I really excited to experience new cooking!! Thank you for sharing.
