Cook Time: 2 hours (50 minutes per 1kg (2.2lbs)
Cook Temp: 240c (464f) for 45 minutes, then turned down to 165c (329f) for remainder fo cook
Cook to internal Temp : 70c (158f)
Rest Time: 22 minutes (1 minute per 100 grams (3.5oz)
Cuisine: English / Australian
