Today I present my pork fried pork. This Asian inspired recipe is not hard to make and offers a lot of flavor, without adding all the carbs.

Ingredients:
1.5 lbs. Pork loin
2 cloves garlic, minced
1 tsp ground ginger
2/3 cup soy sauce
1/2 cup chicken broth
1/4 cup water
1/3 cup rice vinegar
Sugar substitute = 1/4 cup reg sugar
1 Tbs sesame oil
1 Tbs red pepper flakes
2 stalks green onion, sliced, divided
4 Tbs unsalted butter, melted
4 oz. ground pork rinds
1/2 cup grated parmesan cheese
1/2 Tbs garlic powder
1/2 Tbs ground black pepper
6 Tbs oil, divided
1/8 tsp xanthan gum
Use green onion tops for garnish
Makes 4 servings
Per Serving:

Directions:
1. Marinade – Use a Ziploc bag or bowl and add soy sauce, chicken broth, water, garlic, ginger, vinegar, sugar substitute, sesame oil, red pepper flakes, and green onion whites.
2. Slice the pork into 1/2-inch slices.
3. Places slices under plastic wrap, one at a time and pound to 1/4-inch thickness.
4. Place pork into marinade and refrigerate overnight.
5. Place pork rinds in a bowl add parmesan cheese, garlic powder, and black pepper. Mix to blend. Add butter and mix well.
6. Remove pork from marinade (reserve marinade) and pat dry.
7. Spoon pork rinds over pork. Cover with plastic wrap and lightly pound the pork rinds into the pork. Turn pork and repeat. Repeat until all pork is done.
8. Add 2 tablespoons of oil to a sauté pan over medium high heat. When oil is hot, add the pork and cook each side for 2 minutes. Work in batches to avoid crowding the pan. After each batch remove and discard any pork rinds in the pan. Add oil and cook the next batch the same way. Repeat until all the pork is fried.
9. Add remaining marinade to the pan and add the xanthan gum. Cook until desired thickness.
10. Plate the pork and pour sauce over the top. Garnish with green onion tops.
