Sharing my easy Kare Kare Recipe. A more modern twist to the classic Filipino kare kare uses a different dish as the main meat for this dish. Pork or Pork Shank (Pata) is one of the most economical and easiest meats to cook.
Kare Kare is a Filipino dish that features a thick savory peanut sauce. It is generally made from a base of stewed oxtail, beef tripe, pork hocks, calves feet, pig’s feet or trotters, various cuts of pork, beef stew meat. Vegetables, such as include eggplant green beans and Bok Choy are added. The stew is flavored with ground roasted peanuts or peanut butter, onions, and garlic. It is colored with annatto and can be thickened with toasted or plain ground rice. It is often eaten with bagoong (shrimp paste). Traditionally, any Filipino fiesta is not complete without kare kare.
Sharing another way to cook Pork Kare Kare. Surprisingly it is quick and easy and tastes good.
Here is how to cook Filipino Pork Kare Kare recipe :
PORK KARE KARE recipe :
Ingredients:
For boiling the pork shank:
2 lbs pork pata (pork shank), washed and cleaned
1 medium onion, chopped
7 cloves garlic, minced
8 cups water
1/2 tps peppercorn
1 tsp salt
4 bay leaves
For the sauce:
1 large onion, chopped
1 head garlic, minced
4 tbsp rice flour
2 tbsp annatto powder
4 cups pork broth (from boiling the pork shank)
8 pcs long beans, cut into 3 inch pieces
2 medium eggplant, sliced diagonally
1 cup peanut butter
3 tbsp brown sugar
3 tbsp fish sauce
bok choy/pechay
Directions:
1. In a pot, heat 2 tbsp oil over high heat.
2. Add onion and garlic. Cook for 30 seconds.
3 Sear pork shank until both sides are browned
4. Add 8 cups water, peppercorn, salt and bay leaves.
5. Cook for 1 hour or until pork is fork tender. Occasionally, skim off scum when it appears.
6. Once tender, remove the pork shank from the broth. Reserve the broth for the sauce.
For the sauce:
1. In a pan, heat 2 tbsk oil over medium high heat
2. Add onion and garlic. Cook for 30 seconds
3. Add rice flour. Cook until slightly toasted.
4. Add annatto powder. Mix together.
5. Add 4 cups pork broth, Mix until annatto powder is completely dissolved.
6. Add green beans and egg plant. Cook until slightly tender.
7. Add peanut butter. Stir until sauce thickens.
8. Add the pork and mix until pork is coated with sauce.
9. Add brown sugar and fish sauce. Stir until sugar dissolves.
10. Add bok choy/pechay. Let it simmer for 2 mins.
11. Serve with shrimp paste.
