I picked up this decent sized pork sirloin roast from my local grocery store and decided that I needed to fire up my Big Easy!

I injected the roast with the last of my Cajun Injector Creole Garlic Marinade, and then coated it with an Asian BBQ Rub from the Yak and Yeti in Disney World. Some friends were down there and picked that up for me!
Then I dropped it in the Big Easy without the lid on for about 20 minutes. I realized that it wasn’t cooking fast enough, so I threw the lid on for the rest of the cook.
One it hit 145F internal temp, I pulled it out and let it sit for a few minutes. I cut into that thing, and it was perfect! The outside was crispy and the inside was nice and juicy!

We love our Big Easy and mostly use it for pork loins. How did you rig the thermocouple thermometer … did you buy it or make it? Our BE is probably 10 years old at least.
Doing a pork roast today. How long did yours take to cook?
