In this video I share with you a simple pork wet fry recipe that is Kenyan Inspired.

Full Recipe: Pork Wet Fry Recipe
Serves 2
• 300g pork cubes
• 1 medium onion (chopped)
• *2 spring onions(whites for cooking/green for garnish)
• 3 garlic cloves (grated)
• 1 tsp ginger (grated)
• 2 large very ripe tomatoes (chopped)
• 2 tbsp soy light sauce
• 1 ½ tbsp oyster sauce
• 1 tbsp oil
• Black pepper to taste
• Pinch of salt about less ¼ a tsp ( very little cause we are using both soy + oyster sauce which are both salty)
• 1 small bunch of dhania
Method:
1. Heat Oil in a pan, add the pork cubes, season with salt + black pepper, stir and cover to simmer for the meat to steam and cook through about 10 minutes
2. While the meat is still steaming add the ginger and garlic, stir and continue to simmer the meat until all the liquid evaporates and fat renders in the pan/sufuaria
3. Stir in the red onions and whites of the spring onions to the pork which at this stage should be slightly turning brown, cover with the lid to sweat the onions for about 2 minutes or until they start to caramelize.
4. Deglaze the pan with the soy sauce and oyster sauce and keep stirring until the sticking bits at the bottom of the pan are no longer sticky (you can also add a dash of water to help with the deglazing)
5. Add your chopped tomatoes stir and cover to simmer for about 10minutes or until tomatoes are soft and sauce coats the pork.
6. In the last 3 or so minutes of cooking add some chopped capsicums cook for two minutes
7. In the last minute finish off by stirring in some freshly chopped dhania and the green parts of the spring onions.
8. Serve with your choice of starch.
P.s:
*I like to save a few dhania and spring onions to top has garnish as am eating the meal.
*If using medium tomatoes use about 3 of them.
*If you decide to add water please add very little about a tbsp. or 2 as the sauce should coat the meat.
