Ingredients:
Fillings:
– 500g ground pork
– 350g cabbage, chopped
– 1 tsp salt, to salt the cabbage
– 1 tbsp garlic, minced
– 1 tbsp ginger, paste
– 3 tbsp green onion, chopped
– 1/4 tsp szechuan peppercorn powder
– 1/4 tsp white pepper powder
– 1/4 tsp five-spice powder
– 1 tbsp soy sauce
– 1 tsp dark soy sauce
– 2 tsp sesame oil
– 1 tbsp oyster sauce
– 1/3 cup chicken stock
– 60 wrappers, store bought or watch previous reel for recipe on how to make the 2 colors dumplings wrappers.
Instructions:
– salt the cabbage and let it sit for 10 minutes.
– squeeze out as much water as possible.
– add cabbage to a mixing bowl.
– add ground pork.
– add the rest of the filling ingredients.
– mix and stir filling in a circular motion. This helps build protein structure and create nice texture for the dumplings filling.

– to cook the dumplings, add dumplings to boiling water for 3 minutes.
– when dumplings float to the top, pour in 1/2 cup cold water. This helps lower the cooking temperature.
– when water goes back to a boiling point. Add another 1/2 cup cold water to the pot.
After another minute, scoop dumplings out onto a serving plate.
– serve dumplings with soy-chili oil dipping sauce.
