Ingredients:
Korean Corn Cheese:
– 2 tbsp of butter
– 1 can of corn (drained)
– 2 tbsp of kewpie mayo
– 2 oz of mozzarella (shredded)
– Salt and pepper

Tacos:
– 2 tbsp of oil
– 5 oz of leftover Chinese BBQ pork
– 2 flour tortillas
– Scallions (chopped)
– Lime juice

Recipe:
Korean Corn Cheese:
1. Cook 1 can of corn in 2 tbsp of butter for 5 min. Season the corn with salt and pepper.
2. Mix the corn, half of the shredded mozzarella, and kewpie mayo. Layer the other half of shredded mozzarella on top.
3. Bake the corn at 400°F for 10 min and broil for 3 min.

Tacos:
1. Pan-fry leftover Chinese BBQ pork until browned, then set it aside.
2. Pan-fry flour tortillas in the leftover oil.
3. Add the pork, corn cheese, scallions, and lime juice to the tortillas.
