
Ingredients:
– 6 oz of leftover carnitas
– 1 large flour tortilla
– 4 oz of cheddar (shredded)
– Onions (diced)
– Cilantro (chopped)
Recipe:
1. In a hot non-stick skillet, reheat 6 oz of leftover pork belly carnitas until the fat is rendered, then set to the side.
2. Place a large flour tortilla in the skillet with the pork fat. Layer shredded cheddar over the whole tortilla, pork belly carnitas over half of the tortilla, diced onions, and chopped cilantro.
3. When the cheese is melted, gently fold the tortilla over. Cook each side until crispy.
