If you love mochi, you’re gonna love this festive pumpkin mochi recipe! I got this easy pumpkin dessert recipe from my cousin and now I’m sharing it with you.
I’ve made this several years in a row for the office potluck. It’s a cheap, easy dessert to make at home and for a large group. Feel free to cut the recipe in half because it makes a huge pan!

A full recipe makes about 40 muffins
Ingredients:
2 blocks margarine, melted
2 cups sugar
1 can pumpkin (29 oz)
1 can condensed milk
2 tsp vanilla
4 eggs, beaten
1 box (1 lb) mochiko
2 tsp baking powder
1 1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
Instructions:
1. Mix together all wet ingredients (butter, pumpkin puree, eggs, condensed milk, and vanilla extract)
2. Mix together all dry ingredients (mochiko, baking powder, cinnamon and pumpkin pie spice)
3. Mix dry into wet
4. Pour into a greased pan
5. Bake at 350F
6. Muffins/cake pan for 30 mins; 9×13 pan for 1 hr; 8×8 pan for 70-80 mins
7. Cool for 2-3 hours
8. Slice with a plastic knife
