Punjabi Chicken Gravy Recipe

This Punjabi Chicken Gravy is an absolutely delicious and flavorful dish made with tender chicken and a rich, spiced gravy. The blend of aromatic spices, creamy texture, and perfect balance of flavors make it a must-try. It pairs wonderfully with roti or rice, making it a hearty and satisfying meal. Ingredients (1kg Chicken):
– Chicken, curry cut with bones – 1 kg
– yogurt – 1 cup
– Salt – as per taste
– Turmeric powder – 1/2 tsp

For Paste :
– Cumin seeds – 1 tsp
– Cardamom – 4
– Cloves – 4
– Cinnamon – 1 inch
– Black cardamom – 1
– Onion (sliced) – 4 medium
– Ginger (chopped) – 1.5
inches
– Garlic cloves – 6
– Oil

Other Ingredients:
– Tomato – 2(medium)
– Red chilli powder – 1.5 tbsp (depends on spicy level)
– Coriander powder – 2 tsp
– Cumin powder – 1 tsp
– Garam masala powder – 1 tsp
– Kasuri methi – 2 tsp
– Oil

Preparation:

1. Marinate chicken with turmeric powder, curd/yogurt, and salt. Set aside for 30 minutes.
2. Heat oil in a pan, add whole spices, sliced onions, ginger, and garlic. Fry on medium heat for 4-5 minutes until onions turn soft and light golden. Let it cool.
3. Grind it, then add water and blend to a smooth paste.
4. Prepare tomato paste with 2 medium tomatoes.

Process:

1. Heat oil in a kadai, add the blended paste, and saute on medium heat for 4 minutes until oil separates.
2. Add tomato paste, saute for 2 minutes until oil separates.
3. Add red chilli powder, coriander powder, and cumin powder. Mix and saute on medium-low heat for 5 minutes until oil separates. Add water if needed.
4. Add marinated chicken, fry on high heat for 3 minutes, then on medium heat for 10 minutes.
5. Lower the heat, cover, and cook for 5 minutes.
6. Add garam masala, and add water. Cover and cook on low heat for 15 minutes.
7. Add kasuri methi and coriendar leaves
