Queso Recipe
Ingredients:
Vegetables:1/4 cup chopped onion
1 clove garlic, minced
1 tablespoon butter
1 small tomato, diced
1 small bunch cilantro, chopped
2 jalapeño peppers, fire-roasted and chopped

Cheese:2 lbs cheddar and American cheese combination (heavy on the processed cheese)

Spices:1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon white pepper
Black pepper to taste

Instructions:
Prepare the Ingredients:Fire-roast the jalapeño peppers: Place them over an open flame (or under a broiler) until the skin is charred. Allow them to cool, then peel off the charred skin, remove seeds if you prefer less heat, and chop.
Dice the tomato, chop the onion, mince the garlic, and chop the cilantro.

Sauté the Aromatics:In a large saucepan, melt the butter over medium heat.
Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Combine Ingredients: Add the chopped fire-roasted jalapeños and diced tomato to the pan. Cook for another 2-3 minutes, until the tomatoes begin to soften.

Add Spices: Once the cheese is fully melted, add the chili powder, smoked paprika, garlic powder, onion powder, white pepper, and black pepper to taste. Stir well to combine.

Melt the Cheese: Reduce the heat to low and gradually add the cheddar and American cheese combination. Stir continuously to ensure even melting and to prevent the cheese from burning.

Finish and Serve: Stir in the chopped cilantro just before serving.
Transfer the queso to a serving dish or keep it warm in a slow cooker.

Serving Suggestions: Serve with tortilla chips, warm soft pretzels, or as a topping for nachos, tacos, or baked potatoes.

Tips:
For a smoother texture, you can add a splash of milk or cream while melting the cheese.
Adjust the spice levels to your preference by adding more or less of the chili powder and jalapeños.
For extra flavor, consider adding a splash of lime juice or a teaspoon of cumin.
