Quick and easy chicken curry recipe. This is not traditional chicken curry recipe but the easiest way and it so delicious! Follow this recipe to learn how to make creamy chicken curry.

Ingredients:
900g (2 pounds) chicken breast, cut into cubes
2 onions
3 garlic cloves
1 tablespoon grated ginger
3 tablespoons vegetable oil
2 tablespoon curry powder
1.5 teaspoons salt
1/2 teaspoon black pepper
4 large tomatoes, chopped
1 can (400g/14oz) coconut cream/milk
½ teaspoon garam masala (optional)
Coriander, chopped – for garnish
Directions:
1. In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally.
2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes.
3. Add coconut milk/cream, season with garam masala and salt, stir, and cook until lightly thickens.

Take 200 ml of curry out to taste test how many ml of fish sauce to add. Once determined that the taste is satisfactory. Check and log amount of fish sauce ml used in ratio to 200 ml of curry. Calculate the total amount of liquid used in curry in pot, e.g. water, coconut milk, vegetables [excrete some water], minus 0.5 or less % of liquid volume due to heat evaporation [ depends on duration and temperature of heat ]. So you can add the right amount of fish sauce to pot of curry; or you can taste test by add and stir little by little.

At 3.20 its a creamy gold colour. At 3.21 its an orange brown colour. The last previous ingredient was garam masala but that was stirred in and didn't really change the creamy gold colour very much. So what happened – what else did you put in?

Hello, what kind of coconut milk or cream to use for this dish. There are alot of coconut milk so which one to buy light unsweetened or heavy ??

I'm always a bit scared of making my own curry and usually go with a shop bought sauce or a ready meal which never quite meet my expectations but this looks really simple to do so will be giving this a try. I might add coconut milk and some cream at the end as I like creamy sauces and judging by the comments, people who have made it love it.
I'm allergic to coconuts…can it be subbed with something else?

A few things can make life easier here. Instead of grating the garlic and ginger spoiling your hands, just use garlic and ginger paste (which you can buy from the shop).
You can use tinned tomatoes instead of trying to buy fresh ones and spend time cutting them.
Instead of using unhealthy veg oil, use healthy oils such as olive oil. Also you can use cooked meat to speed things up.

Someone help, the Coriander? I've searched and only found a spice. In the video it looks like ans Herb, like Cilantro. I can't find green Coriander. ???
