I cook chicken breast in butter only and it that makes it turn out delicious. The seasonings stick better that way and the texture be right. I tend to sauteé it in lemon pepper/cajun type flavors. Using oil ruins it for me because the flavors be a lot lesser and the chicken texture sucks.
