  1. This pound cake does look lighter than the usual pound cake. I’m going to try this recipe. I was surprised, though, because there is no actual shredded coconut in the cake. I wonder if I could add some on the top of the whipped cream? Sounds good to me!! ❤️

  2. I have got to make this, because I love anything coconut. But I can think of a fun variation which I'm surprised as it mentioned here. How would that take me if you zested two or three limes, and added in that lime zest to the cake batter coconut and lime karma together, is absolutely sublime. A little bit of fresh diced mango, perfectly ripe, and some whipped cream? Baby, I'm all in.

  3. We'll have to try this. I'm from Boston, now living in SE Asia, and grow coconuts, with 2 groves. I can't believe than no one's doing this here. All these ingredients are easily available. But home baking simply isn't popular here, people just go out and buy all their baked goods.
