Ingredients:
8 oz pasta of your choice
2 cups packed fresh spinach
1 clove garlic, minced
1 tbsp butter
1/2 cup heavy cream
Salt and pepper to taste
Grated Parmesan cheese (optional)
Instructions:
Cook the pasta according to the package instructions.
Meanwhile, bring a pot of water to a boil. Add the spinach and cook until wilted, about 1-2 minutes. Drain the spinach and transfer it to a blender or food processor.
Add the garlic, butter, and heavy cream to the blender with the spinach. Puree until smooth. Season with salt and pepper to taste.
Drain the pasta and return it to the pot. Add the spinach puree to the pot and toss to coat the pasta.
Serve the pasta hot, topped with grated Parmesan cheese if desired. Enjoy!
