  1. I want to make these for Thanksgiving this week, but I want to make the dough ahead of time and proof the rolls overnight in the fridge Wednesday night. Should I use active dry yeast if I am going to proof the rolls overnight? I'm concerned about using the instant yeast and overproofing if I start the night before

  3. I made these rolls today to try the recipe before the holiday. I put in a tad extra milk and I didn’t have instant yeast. So I bloomed the yeast then followed the recipe. The extra milk problem was solved using what I learned watching the video before baking. I kept testing the dough with my finger tip until it moved from sticky to tacky! That worked perfectly and the rolls were delicious pillows of perfection! The videos are so interesting and informative. Love this channel.
