Check Out Those Thighs! | Chicken & Mushroom Wild Rice Skillet Dinner

INGREDIENTS:
5-6 bone in skin on chicken thighs- cleaned and seasoned with salt & pepper
1 medium diced onion
2 stalks diced celery
1 8oz. packed diced mushrooms
3 cloves minced garlic
1 package long grain & wild rice mix
2 cups chicken broth
1 can cream of chicken
1/4 cup fresh chopped parsley
salt and black pepper
2-3 Tbsp. oil

In an oven proof skillet on medium high heat add oil and place chicken skin side
down. Season both sides with salt and pepper.
Cook for 3-4 minutes or until skin is golden brown and then flip.
Cook for an additional 1-2 minutes and then remove from the pan.

On med heat add onions and celery. Cook and stir for a couple minutes.
Add mushrooms. Cook and stir for another 3-4 minutes.
Add garlic, stir and cook for 30 seconds.
Add rice. Cook and stir for 1 minute.

Add broth and stir to incorporate.
Add seasoning packet, fresh parsley and any other herbs.
Add cream of chicken and stir to incorporate. Bring to simmer and turn off heat.
Place chicken skin side up and all the juices.
Cover tightly and bake at 400 degrees for 30 minutes.
Remove from oven and do not take off the lid. Let rest another 15 minutes.

Serve and enjoy.

How To Make Chicken Stroganoff | Rotisserie OR Canned Chicken Recipe

INGREDIENTS:
12 oz. cooked egg noodles
2 cups cubed cooked rotisserie chicken
1 1/2 to 2 cups chicken broth
1 medium diced onion
1 – 16oz package sliced button mushrooms
4 Tbs. butter
4 Tbs. flour
2 tsp. minced garlic
1/2+ tsp. salt
1/4+ tsp. black pepper
1/2 tsp. paprika
1+ Tbsp. dried parsley
1 tsp. thyme
1-2 tsp. Dijon mustard
1/2 cup sour cream

In a pan on medium heat add butter and onions. Cook and stir a couple minutes.
Add mushrooms. Cook and stir for 4-5 minutes or until mushrooms release moisture.
Add garlic, salt and black pepper. Cook and stir 30 seconds.
Add flour, stir until incorporated.

Add chicken broth, stir and scrape bottom.
Taste. Add paprika, parsley and thyme and Dijon. Stir.

Add peas, stir. Add chicken, stir and cook for a couple minutes to heat chicken
and then turn off heat.

Add sour cream and stir to incorporate.

Serve over egg noodles, pasta, rice, toast or mashed potatoes.

How To Make THE BEST Mongolian Chicken ~ Spicy Chicken Stir Fry

INGREDIENTS:
1 medium sliced onion
4-5 chopped green onions – approx 2″ pieces
1 cup sugar peas
red chili peppers – optional
1 tbsp. minced garlic
1 tbsp. minced ginger
oil

Chicken marinade:
1 pound of sliced or cubed boneless chicken
1 egg white
1 tbsp. cornstarch
1/4 tsp. salt
*Mix above ingredients and let marinate for 10-15 minutes

Sauce:
1/4 cup water or broth
2 tbsp. soy sauce
2 tbsp. hoison sauce
1 tbsp. Chinese cooking wine or rice vinegar
1 tbsp. brown sugar
1/4 tsp. red pepper flakes or to your taste
*Mix above ingredients

In a skillet or wok on medium high heat add oil and chicken pieces.
Let cook for 15-20 seconds before turning.
Cook and stir until done and remove from pan.

In same skillet add a little more oil, minced garlic and ginger.
Cook and stir for 15-20 seconds.
Add sugar peas and onions.
Cook and stir for 2-3 minutes.
Add red chilies, cook and stir for another minute.

Add sauce and stir in.
Add chicken and all juices. Cook and stir for one minute.
Add green onions, stir to combine and serve.
Enjoy.
