Some of you who aren’t local Singaporeans might be wondering what is the meaning of the term Zi Char (sometimes spelt as Zhi Char / Tze char) . For us Singaporeans, almost everyone of us knows what it means. Before I tell you what it means, I shall construct a few sentences here to help you guess what it means. (1) What do you wanna eat? Zi char or Mcdonalds? (2) Which zi char stall is the best in Singapore? (3) Which zi char stall serves the best chilli crabs?
Can you guess what zi char means? Alright, zi char is a hokkien term which literally means cook & fry in Mandarin – it’s a term we use to describe a coffeeshop stall that serves freshly cooked dishes and such a stall is usually operated by Chinese .I have no idea how this term came about but I guess in the olden days, zi char stall owners must have said they serve cooked and fried food dishes so over the years, people just affectionately refer to them as Zi Char. So much about zi char but what has it gotta do with our recipe today? That’s because this curry pork is a zi char inspired dish – a quick stir fry dish which you can easily whip out at home.

Meat is soft and curry is tasty .

There is no coconut milk in this dish?
i suggested you can add in curry leaves to enhance the curry favour
Hi Roland, can I omit the chilli powder for this dish? Thank you and have a good day ahead!
Tried this. Is so good and yummy. I'm gonna try to replace it with pork ribs next time. Thanks!!
When you say corn flour, do you mean corn starch? Your corn flour looks white, whereas our corn flour is very yellow (it's finely ground polenta).
Wow awesom
Hello! Can I use cornstarch instead of cornflour? If so, will it have a big difference? Thank you.

I dont think it is delicious
Few times I watched your show I noticed that you used baking soda to your meat marinade, there must be a reason for that?
eat pork good for body it's true.no joke。
What a phenomenal dish and a lot of ingredients you have used are pretty much the essentials of making an indian curry.
no idea why but i always fail at this.
I've cooked 3 times using your recipe but still find it not quite the same taste as the ones we order from Spore zhi char stalls….what could have gone wrong? Mine looks a bit more redder than yours. I used Baba brand curry and chilli powder.
For meat curry powder, should beef or lamb curry powder be used?
I cooking this dish today but I don't have any pork meat powder so I skip to that one .I hope the outcome is good. Thank you for this recipe Sir 😊
I always think there is coconut milk in this dish. If no coconut milk, I can eat this more often. Will try out your recipe. Thanks for sharing. Roland, you can cook so well and I wonder how Jamie can stay slim 🙂
👍👍👍👍👍
Eat pork good for healthy.get stroke very light.if eat cow ,goat getting stroke very seriously.all body cannot move about ten yrs on the bed.
Is it possible to give the name brand of the curry powder? I've tried a fiew and didn't like them.
Made this for dinner tonight, great texture but a little disappointed with the flavour – added a teaspoon of tomato paste and soya sauce and extra salt for a boost. My 2 large aussie size spanish onions might have thrown the portion out of balance. I was a little skeptical about the chilli powder and added only half tablespoon and that's is still way too fiery, maybe that just boils down to the brand. Overall a nice dish and would attempt it again with adjustment to the recipe. Thanks for sharing. 🙂
Thanks for the name of the pan!
Could you please spell the name of the (pan) you are using? Thank you. I will try your recipe!
