Start with a ripping hot skillet. Then, flip the pork every 2 minutes. That counters the cupping action of pork. <3

I brined my chops first, then used your recipe. I add some gorgonzola cheese to the garlic butter mix, (I've been using that mixture for my grilled steaks and it's wonderful). Chops were the best ever.
