  1. I used to throw out the harder parts of the Asparagus as you did, until I watched a video by Fallow. They showed how they cut them up thin and cook them. i do that now and they turn out great. I no longer throw up the lower stalk now. With the way you already are cutting the Asparagus thin, doing the same to the lower stalks would be no problem.
