what's this burner called?
I used to throw out the harder parts of the Asparagus as you did, until I watched a video by Fallow. They showed how they cut them up thin and cook them. i do that now and they turn out great. I no longer throw up the lower stalk now. With the way you already are cutting the Asparagus thin, doing the same to the lower stalks would be no problem.

Intuitively, I would have considered a quick blanching of the asparagus. Maybe just 30/60 seconds to take a bit of the rawness out. Any thoughts from others?

For some reason, cilantro tastes like soap to me so I use basil.

Edit: would dijon or regular yellow mustard work? English mustard isnt exactly readily available in east texas and quite frankly idk what the difference is
