It’s true, Chicago-style BBQ is a thing, and while the city might not be known for BBQ on the national stage like Texas, Carolina, or Kansas, the Mecca of the Midwest has more BBQ joints than I have brain cells lost in my teens. You claim the ribs are not smoked. How do you know, do you work in the kitchen at Carsons. These guys do not know what they are talking about. I work at Carsons ribs. They have a smoking machine in the kitchen. They throw wood in the machine I have seen it. I figured no response to there BS.
Smoque? Seriously? Well I do suppose it appeals to the Midwestern mediocroty of everything else. Smoque is the casserole of BBQ
Those not good BBQ spot but they have good food i always love carson but its oven type food not smokie flavor but its good.

Boujee overpriced rib joints, no hood spots! Hecky's is not even in the Chi, it's in Evanston. White people ribs. Come to the hood we'll show how it's done, right.
Kudos for thanks for including Hecky's underrated Q in here! Thing about Hecky's, Lem's etc is that is they were around doing some of the only seriously quality Q in the city until Fat Willie's and then Smoque (for brisket) brought some game to the scene back in the aughts. Hot tip: Chicken Shack in Evanston for my money has the best fried chicken not only in the city but country and they we're doing it waaay before the trendy fried, hot, buttered, honey, Nashville yada stores hit the scene and is plain old in another league from the mostly overrated old school chi chicken joints!
Twin Anchors was my go-to , but I know live in the suburbs.
Definitely not a fair comparison when Green Street 's pitmaster serves up a platter with all of their specialties and you order some Smoque sliced brisket to eat in the car. I haven't tried Green St. and probably won't because it is too expensive for bbq.
As a backyard BBQ guy, a little trick that takes brisket to the next level is a little pile or small container of salt…lightly tap your bite in the salt, not too much, because it really opens up the flavor of the beef since most of the flavor is on the crust and smoke ring

Friday nights in high school, hanging out with my dad, ordering a couple slabs of ribs and cole slaw from Hecky’s, put on the Blackhawks game or an action movie, fond memories.
Years ago there was the Ribbery on St Charles Rd in Villa Park. Unfortunately they closed .
How could you not take in the most famous of Chicago's BBQ spots…..Jones BBQ and Foot Massage?????

Seriously though, I know it's not in Chicago, but my favorite BBQ spot of all time was Hog Wild, which used to reside in Midlothian, IL on the south side. Great place, until Midlothian decided to say that they could no longer reside at their place and pulled their city license, which was the dumbest thing they could have ever done, and now that place is gone. There is another Hog Wild way out in New Lenox, IL but I hope they can find a spot back either in that area, because they are the best BBQ I've ever had.
Carson’s is not good BBQ. Their star faded decades ago – stopped eating there in the ‘90’s. Surprised you even considered them as a contender…

Where are all the south side places? This is mostly high end places with Carsons as a suburban kid memories. Not "Chicago bbq"
LGBTQ bbq hosts some good places in chicago .however chicago is a fusion of culture no westside or southside bbq mentions just northside is not chicago
Just discovered your channel. As many comments said already, you needed more South Side. You should do another episode of Chicago BBQ, and try out Honky Tonk BBQ on 18th St.
