Further to my previous comment, have since done this same thing with a big chunk of dead cow and my poor-man's version of SPG, then did it with a pork collar-butt and millions of fresh basil out of my garden.
It's become a staple cooking method in our house and we call it Cut & Baste.

Just followed your exact plan using lamb rumps slathered with fresh rosemary in oil then buckets of crushed garlic within the slits.
Panko, ties and baked ever so slowly while basted continually with my own BBQ sauce.
Superb to the point I'd serve it to a New Zealander and don't they know how to raise and cook lamb!
