*Today, I’m making an unusual and delicious upside-down cake with caramelized peaches. Join me in creating this delightful treat!*
_Cake Ingredients:_
Peaches 500g (4-5 pcs)
Butter 135 g
Sugar 65 g
Eggs 2 pcs
Flour 100 g
Baking powder ½ tsp
A pinch of salt
Vanilla
_Caramel Ingredients:_
Sugar 100 g
Water 30 g
🔹 *I used an 8” (20 cm) springform pan.*
❗️ *Use Room Temperature Ingredients.*
*Step 1.* Cut the peaches in half, then cut each half into 4 pieces. Generously grease a springform pan with butter, and arrange the peach slices on the bottom. In a heavy-bottomed saucepan, cook the caramel by combining the sugar and water. Heat over medium heat until the mixture turns golden brown. Pour the finished caramel over the peaches in the pan.
*Step 2.* In a deep bowl, beat softened butter and sugar for about 5-7 minutes until light and fluffy. Next, add the eggs, a pinch of salt, and vanilla, and beat until well combined. Sift the flour and baking powder into the mixture and stir until smooth and shiny.
*Step 3.* Place the prepared batter on top of the peaches and caramel, smoothing it evenly with a spatula. Bake in a preheated oven for 30-35 minutes at 390°F (200°C) until the surface is deeply golden brown. Let the cake cool slightly, then remove the sides of the pan and invert the cake onto a plate or tray so that the bottom is facing up.
