Recipe Book Vol 4 Ground Beef Recipes Pt 2



*** Sloppy Joe ***

2 lbs Ground Beef (85%)
1 Med Onion – chopped
1 Green Bell Pepper – chopped
4 Cloves Garlic – minced
1 tsp Salt
1/2 tsp Pepper
3 Tbsp Brown Sugar
4 Shakes of Worcestershire
1 1/2 Tbsp Mustard
1 C Ketchup
1 C Water
1 Heaping Tbsp Tomato Paste
Pkg Hamburger Rolls

Brown ground beef, add onion, green bell pepper, onion, garlic, salt & pepper, stir until well blended. Add brown sugar, worcestershire, mustard & ketchup, stir. Stir in
water and tomato paste, stir until combined. Continue to cook on low-med heat, stirring occasionally. Be patient this part does take some time to get the right consistency.
It usually takes 30-45 minutes for this process, usually closer to 45. You’ll know it’s done is when the mixture doesn’t falloff the spoon.

Serve on hamburger rolls, toasted if you prefer. I like mine toasted

*** Double Decker Tacos ***

12 Taco Shells
12 6″ Soft Flour Tortilla
1 lb Ground Beef
1 pkg Taco Seasoning *prepared according to directions
1 Can Refried Beans

Garnish:

Shredded Lettuce
Diced Tomatoes
Diced Onions – optional
Shredded Cheese
Sour Cream
Taco Sauce

In a medium skillet brown ground beef. Drain liquid if needed. Add 1 pkg of taco seasoning and prepare as directed.

Heat refried beans in a small pot. I like to thin down my beans so I’ll add a little water or chicken broth.

Heat the hard shells & soft shells according to directions.

To prepare:

Lay out your soft shells, spread a layer of refried beans on top and place a hard shell in the middle. Fold over to create a cover. Fill with 2 Tbsp beef mixture. Top off with as much or as little of sour cream, lettuce, onions, cheese, tomatoes & taco sauce.

*** Creamy Beef Pasta Skillet ***

2 Tbsp Olive Oil
1 Medium Onion – diced
2 lbs Ground Beef
3 -4 Cloves Garlic – minced
2 tsp Italian Seasoning
1/2 tsp Red Pepper Flakes
Salt & Pepper to Taste
1/4 c Flour
1 1/2 C Beef Broth
3 C Tomato Sauce
1 C Heavy Cream
1 Lb Pasta
2 C Sharp Cheddar Cheese – shredded
Fresh Parsley for garnish

Boil pasta according to directions for al dente pasta

In a large skillet drizzle oil, add onion, cooking until almost translucent. Add beef cooking until no longer pink. Drain excess liquid if needed. Add garlic, italian seasoning, red pepper flakes, salt & pepper to taste. Stir well. Add flour, cooking 2 – 3 minutes. Add in tomato sauce & beef broth, stirring until combined. Cover and simmer 15 minutes.

Stir in heavy cream, add pasta into skillet and stir until well coated with sauce. Stir in cheddar cheese.

Garnish with fresh parsley

*** Cottage Pie ***

1 Tbsp Olive Oil
2 lbs Ground Beef
1 Large Onion – chopped
2 C Frozed Peas & Carrots
2 Celery Stalks – diced
2 – 3 Cloves Garlic – minced
1/4 C Flour
1 Tbsp Tomato Puree
1/2 C Red Wine
2 Tbsp Worchestershire Sauce
2 C Beef Stock
1 tsp Dried Thyme
2 Bay Leaves
Salt & Pepper to taste

Mashed Potatoes

2 1/2 lbs Potatoes – cubed
3/4 C Milk
6 Tbsp Butter
1 C Cheddar Cheese – shredded
1/4 tsp Nutmeg
Salt & Pepper to taste

Place potatoes in a pot and cover with water. Boil for approx 20
minutes or until fork tender. Drain.

Place in a bowl and add milk, butter, mash with a masher or hand mixer.

Add nutmeg & cheddar cheese. Mix well. Set aside

Add oil to large skillet brown the meat then remove from pan. Remove excess fat leaving
1 Tbsp behind.

Add onions cooking for a few minutes, add celery & garlic. Stir for a few minutes. Add frozen peas & carrots.

Sprinkle on the flour cooking for 1 to 2 minutes. Add tomato puree, thyme, red wine & Worcestershire. Stir to coat the vegetables.

Add beef stock and meat back into the skillet. Add bay leaves.

Cook mixture to reduce the sauce until it thickens like gravy. This may take 30 min- 45 minutes maybe a bit longer, depending how thick you like your gravy. It also makes a more flavorful gravy the longer it cooks. Remove bay leaves.

If your skillet is large enough spoon the mashed potatoes on top. Or you can use a 9 x 13 baking dish.

Bake @ 350 F for 25 – 30 minutes.
