Recipe:
Picahna:
Trim any loose or hard fat off the piece of meat on both sides
Slice into 4 steaks cutting with the grain
Skewer steaks and season liberally with salt & pepper
Cook on rotisserie for 45 mins – 1 hour at about 300 degrees
Remove when internal temp hits 125F
Allow to rest until your final temperature doneness preference
Chimichurri Recipe:
1 Shallot (finely chopped
3 cloves garlic finely chopped
1/4 C Parsley finely chopped
1/4 C Cilantro finely chopped
1 Jalapeno cored, and finely chopped (optional)
1 TBSP lime juice
1 TBSP Red Wine Vinegar
1/4 C Olive Oil – enough to coat thoroughly
1 TBSP red pepper flakes optional
Salt and Pepper to taste

The wide end reminds me of fillet, the narrow of good sirloin, which makes sense, because another name is sirloin cap.
