【Ingredients】

200 g shabu shabu pork slices
200 g konjac block
1 tbsp rice vinegar (or any colorless vinegar)
1 tbsp cooking oil
[ Miso Mayo Sauce]
1 tbsp miso
1 tbsp mirin
1 tbsp sake
1 tbsp mayonnaise
1/2 tbsp sugar
1/2 tbsp soy sauce
[ Garnishes ]
1 scallion, chopped
Shichimi powder (Japanese assorted chili powder)

【Steps】

1. Cut the pork belly slices into 3 sections.
2. Tear konjac block with hands into bite size pieces and soak them in 1 tbsp rice vinegar (or any colorless vinegar).
3. Boil the konjac for 3 minutes and then drain well.
4. Mix 1 tbsp miso, 1 tbsp mirin, 1 tbsp sake, 1 tbsp mayonnaise, 1/2 tbsp sugar and 1/2 tbsp soy sauce in a bowl and set aside.
5. Add 1 tbsp cooking oil to a well preheated wok. Add the konjac pieces to sauté for 2 minutes.
6. Add the pork slices to the wok and continue to cook until the meat turns white.
7. Add in the sauce to the wok and mix well with other ingredients. Add chopped scallions and toss them briefly before plating.
8. Garnish with Japanese chili powder before serving.
