Ingredients:
– 1.5 lb. pork belly
– 3 tbsp rock sugar
– 1/4 cup soy sauce
– 1/8 cup dark soy sauce
– 1/3 cup rice cooking wine
– Star anise pods
– Bay leaves

Recipe:
1. Cut the pork belly into 1/2-1 inch chunks.
2. Add the pieces to a pan, continuously stirring until the fat is rendered.
3. Add rock sugar, soy sauce, dark soy sauce, rice cooking wine, star anise, and bay leaves. Stir until well combined.
4. Add enough water to cover the top of the pork and reduce the heat to low. Braise for 30-45 min or until the sauce is reduced and thickened.
