Welcome to Roasted Curry India by Kunal Bhatia, and today, I’m excited to share a delightful and healthy twist on a classic favorite—Spaghetti Pasta. This recipe features a nutritious sauce made with chopped zucchini, mushrooms, and red capsicum for an optional extra burst of flavor.

Ingredients:

350 grams of spaghetti
1 medium zucchini, chopped
200 grams of mushrooms, chopped
1 red capsicum, chopped (optional)
4-5 cloves of garlic, minced
8-9 tomatoes, roasted and pureed
1 teaspoon dried mix herbs
Salt and pepper to taste
3-4 tablespoons olive oil
Fresh basil leaves for garnish
Grated Parmesan cheese (optional)

Instructions:

Cook the spaghetti for 7-8 mins until al dente. Drain and set aside.
Heat olive oil in a large pan over medium heat. Add minced garlic and tomato puree sauté for few mins.
Add Kashmiri Red Chilli for the Color , Add Salt ,
Add the chopped zucchini and sliced mushrooms. Cook until they soften and release their moisture.
If you like, add the chopped red capsicum and sauté for an additional 2 minutes.
Add dried mixed herbs. Season with salt and pepper to taste.
Let the sauce simmer for about 10 minutes, allowing the flavors to meld together.
Add the cooked spaghetti to the pan, tossing well to coat the pasta with the sauce.
Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired.
Enjoy this wholesome and delicious spaghetti pasta, perfect for a quick weeknight dinner or a cozy weekend meal.
