Don't you need to rinse the bicarb off?
Some recipes say to wash the bi carb sofa off and pat dry. The one doesn’t,anyone understand how the whole bi carb Soda thing works ?

0:23 CARNE ABRASADORA AL ESTILO RESTAURANTE CHINO
Ingredientes:
1:15 Marinado:
1 cucharada de salsa de soja
½ cucharadita de bicarbonato (bicarbonato de sodio)
3 cucharaditas de harina de maíz (fécula de maíz)
2:25 Salsa para saltear:
3 cucharadas de salsa de ostras
2 cucharadas de vino Shaoxing chino
1 cucharadita de azúcar
¼ de cucharadita de pimienta negra molida
1 cucharadita de salsa de soja oscura
3:13 2 cucharadas de aceite vegetal
Jengibre pelado y cortado en juliana de 4cm (1,5”)
3 dientes de ajo picados en trozos grandes
2 filetes de solomillo de 200g (7oz) cortado
3 cebolletas (cebolletas) cortadas en bastones
¼ taza de vino Shaoxing chino
Pasos:
0:29 1. Cortar la carne de res a través de las fibras musculares en rebanadas de no más de 3 mm de grosor. Coloque la carne y los ingredientes de la marinada en un tazón y mezcle hasta que estén bien combinados. Reserve a un lado durante 5 minutos.
2:25 2. Mientras tanto, combine los ingredientes de la salsa para saltear en un tazón pequeño.
2:42 3. Coloque una sartén de hierro fundido a fuego alto y deje que se caliente mientras hace el salteado.
3:09 4. Caliente el aceite en un wok o sartén grande a fuego alto. Agregue el jengibre y el ajo y saltee por otros 10 segundos. Agregue la carne y extiéndala en la sartén para que haya una superficie máxima que entre en contacto con la sartén caliente. Deje dorar durante 1 minuto, luego mezcle y saltee. Extienda la carne nuevamente y deje que se dore nuevamente por otro minuto. Luego mezcle y saltee hasta que la carne esté casi cocida. Añadimos las cebolletas y la salsa salteada y salteamos de nuevo otros 10 segundos. Agregue el vino Shaoxing y saltee durante otro minuto o hasta que la salsa espese un poco.
4:28 5. Coloque con cuidado su sartén de hierro fundido precalentado sobre un salvamanteles resistente al calor o una tabla de cortar en su mesa. Lleve su salteado a la mesa en su wok y luego inclínelo sobre la placa caliente (tenga cuidado porque puede salpicar salsa picante). Servir inmediatamente.
Yum yum … I’ve got a few sizZling iron plates…. Hardly use them but when I do it’s a lot of excitement hahaha…..the sizzling dishes are the first meals we used to order when Chinese was introduced to our family back in the 80s, My favourite is sizzling garlic king prawns, I would love to see your take on that dish ♥️👍🏼

Freezing the beef for just a few minutes, 10-15 minutes would make the slicing much easier.
