  2. For us aging folks, the membrane is collagen rich and very beneficial. I prefer leaving it on. I don't care for chewey ribs and like the meat falling off the bone and plenty of smoke flavor! I have a pellet smoker but my ribs were so much better when I had my offset smoker! Another great money saver is buy the full Spare Ribs cut and trim rib tips yourself and you save a great deal of hard earned cash! The tips end up nearly free! Prepare them the same way!

  3. But by wrapping it, you don't get any smoke on the meat. By the time you unwrap it, the meat is past the 145 degree point of which the meat stops taking smoke. Could have just did that in your oven
