Roast Pork Shoulder with Roasted Vegetable Sauce



This is another great dish for a cold weekend night. Pork shoulders (also called butts or Boston butts) are terrific roasts, tastier than pork loin, in my opinion, and definitely less expensive. To feed a big crowd, ask your butcher to cut a larger butt for you, or cook two smaller ones in a single very big roasting pan. Be sure to increase the vegetables, seasonings, cooking liquids, and cooking time proportionally with your meat.

  1. That looks fab! I love pork shoulder. Can you give an approx time of roasting per lb. When I see videos or recipes that give a specific size roast and total time to roast makes it hard to figure out how long per lb to roast for different size roasts.   2. Oh Lidia,tutto buono,ma suggerirei due cose,prima è sempre bene legare la carne,due cosa molto importante, la carne sempre va rosolata prima di della cottura..
    Per il resto brava per la conduzione di tutto e per la semplicità..
