Mexican Zucchini and Beef
Ingredients
• 4medium zucchini – #2 cone
• 3 pounds ground beef
• 4 cloves garlic – #1 cone
• 2-10 ounces Mexican style diced tomatoes with green chilis (salsa or diced tomatoes could be used as an alternative)
• 2 tablespoons chili powder
• 2 teaspoons ground cumin
• 2 teaspoons salt
• 1 teaspoon black pepper
• 1 teaspoon onion powder
• 1/2 teaspoon crushed red pepper flakes
Instructions
1. Brown ground beef with garlic, salt, and pepper. Cook over medium heat until meat is browned. Drain any excess fat.
2. Add tomatoes and remaining spices. Cover and simmer on low heat for another 10 minutes.
3. Add the zucchini. Cover and cook for about 10 more minutes until zucchini is cooked, but still firm.
4. Serve hot and garnish with your favorite toppings, if desired. Example: grated cheese, cilantro, sour cream and corn chips.
