Potato thing is bullshit. Nobody in a real restaurant kitchen would do it like that.
A good mandolin can do exactly that in 1/10 of the time with 1/10 the knife skills and 1/10 of the patience. Then just thin juliene, wash and fry.
Also, those thin crisps are unseasoned. You better hope the scallop shrimp fried ball is seasoned enough. And why coat it in mayo?
Why do all that work with that much patience just to coat it in $1 mayo. Why not some decadent sauce, some nice flavorful herb "alioli" or no mayo at all?

I tried to separate lemon peel from the white pith as Chef John did to make lemon chicken. I gave up and just used my micro plane grater and got the zest that way! Amazing knife skills.
