Today I’m going to be sharing with you my favorite way to enjoy rice and beans, in a MORISQUETA now let me tell you I’m not from Michoacán but I sure enjoy all of the traditional dishes this beautiful state has to offer ☺️ I grew up eating this but in Durango we didn’t know it by morisqueta 😅 the simple meals are always the best!

PRO TIP!!!!
You can substitute pork meat for carne seca (machaca) or cotija cheese

Ingredients:
4 roma tomatoes
1 tomatillo
Chile serranos I use 5
1/8 onion
2 garlic cloves
3 Chile guajillo or puya
Chile árbol I use 5
1/2 tsp oregano
2 lbs pork rib tips
2 lbs pork country style ribs
1/2 tsp cumin
1/2 tsp thyme
1 tsp black pepper
Salt to taste
3 bay leaves
For the rice:
3 cups water
2 tbsp salted butter
1/8 onion
1 garlic clove
1 tsp garlic salt
2 cups long grain rice
To serve
Queso cotija
Frijoles de la olla
1 serving of love 💕

  3. Cooking like Claudia is a good thing, but you are only as good as your ingredients. The sauce is dependent on flavorful veggies, which are almost impossible to find in a U.S. supermarket. Farmer's market would be good. I wonder if the produce at Latin store like Ranch Market would be better?

  5. I enjoy the realness of this woman's cooking. Claudia just throws down in the kitchen, on her real stove, with her real appliances and dishes, and this woman is SWEATING at the end.
