This Seafood Alfredo on the griddle is an easy flat top grill recipe to make on your Blackstone, Camp Chef, or Pit Boss griddle when you’re craving Italian food! We used fettuccini pasta, shrimp, and scallops and made a homemade Alfredo sauce right on the surface of the Pit Boss Ultimate Griddle.
You can start cooking your pasta inside on the stovetop to save some time, then bring it outside to the griddle. Then season one side of the shrimp and scallops by lightly dipping them in your favorite blackening or Cajun seasoning. Add some butter to the griddle, and put your seafood down, seasoning side down first. Allow the shrimp and scallops to cook on the first side to get a good crust, then flip to the next side.
Once your seafood is cooked through, take it off the griddle and start making your Alfredo sauce. Add a good chunk of butter to the griddle and a few tablespoons of minced garlic. Let the garlic get fragrant, but don’t burn it. Then, add your pasta noodles to the butter and garlic. Add heavy cream to the noodles and gently toss to combine. Allow the cream to start reducing some and add in fresh grated parmesan cheese. Stir to combine, and allow to cook so the cream will reduce and the sauce will thicken. Then, add the cooked seafood back to the fettuccini Alfredo on the griddle.

Great tip on the seasoning. Alfredo is one of my favorite dishes. I like it with steamed broccoli. I haven't checked the prices recently here for scallops, but around Christmas times they were around $50 a pound!
Here's something I was thinking about today. Though not the best way to boil noodles or pasta on a griddle top, it can can be done.
But takes a lot of energy (propane/gas) to do so. Would water come to a boil faster if you used a cake or lasagna pan rather the your typical pot? Wouldn't a long vessel, which in theory, would cover more area of the burner below, hence, heating the water faster?
