I somma refined that Seafood Boil recipe and it’s still a hot favourite at home.
Serve with chips, spicy rice, bread, anything to soak up the amazing soupy broth or just drink it from a spoon, so good!!
Seafood boil by @fehmz
1kg baby potatoes. halved and pre-cooked
4-5 corn cobs, sliced and pre-cooked
2 seafood stock cubes (any brand)
Salt to taste
1-2 litres water
250g garlic butter
1/4 cup hot sauce
Spice mix (recipe below)
2 fresh chilli, chopped
2 fresh chilli, slit
1.5-2 onions, finely processed (for gravy)
1.5 onions, roughly chopped
Half green pepper, roughly chopped
Half a bunch of chopped spring onion, bottom half (reserve the balance for garnish)
Seafood from @7seasfisheries
1-2kg prawns, deveined
1kg calamari
1kg mussels, half or closed
1kg crab/crayfish (optional)
Spice Mix:
Half tsp salt
2 tsp lemon pepper
3 tsp smoked paprika (or normal)
2 tsp cayenne pepper
4 tblsp Cajun spice
1 tblsp onion powder
1 tsp dried parsley
2-3 kefir lime leaves (optional)
Lemons, parsley and spring onion, to serve
In your pot, (my pot is from @schumannpro_sa ) sauté the ground onions with garlic butter and some spice mix until translucent.
Add your onions, peppers and chilli with more spice mix. Cook until fragrant. Then add the potatoes and sweetcorn with 1 litre of water. Keep the rest of the water only if you need it.
Add 1-2 stock cubes and salt to taste, let it start cooking. Add a few tablespoons of the spice mix.
The seafood will cook in stages, if you add some too early it will overcook so the calamari needs 20 minutes, add those first.
After 10-11 minutes add the prawns. After 5 minutes add the half mussels. (If you want to add any other seafood just ask your fishmonger how long to cook it for)
Add more spice as you like but don’t overdo it.
Serve with the broth, garnish with lemons, parsley and spring onion.
Enjoy!
