  1. If you want a seafood paella just dont add onion or peas and if you add stock which is not necessary if you make a good sofrito browing the veggies and meats (fish/seafood in this case). Those ingredients are a no in any paella. for the sofrito add some grilled tomato, a bit of smoked paprika (not spicy please haha)
    You should find a good recipe of arros del senyoret, arros a banda or lobster rice that are good seafood paellas or even black rice (its black because of the squid cooked ink)
    PD: a nice tip is toasting a bit the saffron in a pan and then crush it and put it in hot water and pour the "saffron tea" when its boiling.
