1 kg beef (minced, with 20% fat)

2 tablespoons ginger garlic paste
2 green chilies (finely chopped)
½ cup fresh coriander (chopped)

1 tablespoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
1 tablespoon seekh kabab masala (Shan or any brand)

1 tablespoon lemon juice or vinegar

2 tablespoons gram flour (roasted)

Ajzaa:

Piyaz 2 adad (bareek kati hui, pani nikaal lein)
Adrak lehsan paste 2 khanay ke chamach
Hari mirch 2 adad (bareek kati hui)
Hara dhania ½ cup (bareek kata hua)
Kutti laal mirch 1 chamach
Dhania powder 1 chamach
Zeera powder 1 chamach
Garam masala 1 chamach
Seekh kabab masala 1 chamach (Shan ya koi bhi brand)
Namak 1 chamach (ya zaiqe ke mutabiq)
Lemon juice ya sirka 1 chamach
Anda 1 adad (optional, binding ke liye)
Bhuna besan 2 chamach

Tareeqa:
Saare ajzaa ko aik bare bowl mein daal kar achi tarah gundh lein.
Mixture ko 5-10 minutes tak achi tarah masal lein taake chipak jaye.
Ab ise dhak kar kam az kam 1 ghanta fridge mein rakh dein (agar raat bhar rakhain to mazeed acha).
Ab is mixture ko seekh, straw ya pencil par laga kar kabab banayein.
Grill, fry pan ya oven mein sekh lein. Beech mein halka sa oil ya ghee lagate rahein.
Garma garam naan, chutney aur salad ke sath serve karein.

Cumin powder – 1 tablespoon
