PICHEKKISTA NONVEG PICKLES, GHEE & MASALAS PURCHASE LINK

INGREDIENTS AND PROCESS:

CHICKEN MARINATION:

Light Green Chillies – 6
Ginger Garlic paste – 100g
Groundnut oil – 30ml
Make paste above 3 items

Chicken 1kg-piece size 100g
Turmeric powder – half tsp
Red Chilli powder – 1 tbsp
Cloves – 5
Cardamom – 6
Star Anise – 1
Shahi jeera – half tsp
Cinnamon bark – 4 inches
Cardamom powder (20 count)
Green Chillies Blended paste
Saffron – pinch
Fresh lemon juice – 1
Fried Onions – 2 handfuls
Pure Buffalo Ghee – 50g
Coriander leaves – half cup
Curd – 400g
Fried Onions oil – 150ml
Hot water – 200ml

Mix well and Leave for 3 Hours.

Basmati Rice – 1kg
Wash for 3 times and Soak for 1 hour

Saffron Milk:
Saffron – pinch
Hot Boiled milk – 100ml
Leave for 15 mins and keep aside

Rice preparation:

Water – 5 litres
Cardamom – 5
Cinnamon bark – 3 inches
Slitted Light Green Chillies – 4
Mint leaves – 50 count
Chopped Coriander leaves – 1 cup
Cloves – 4
Salt – 4 tbsp (According to taste)
Onions Fried oil – 100ml
Boil for 5-6 Mins on High Flame
Fresh lemon juice – 1
1 Hour Soaked Basmati Rice
Add 1st layer of Boiled Basmati Rice
Spread equally and sprinkle Shahi jeera
Add 2nd layer of Rice
Buffalo Ghee 100gms
Spread equally to all sides
Sprinkle Shahi jeera – half tsp
Sprinkle Saffron Milk

DUM Process:
Put the cloth on the edges on hundi, close the lid and Put the weight almost 10kgs.

5 Mins on High Flame
After 5 mins, place an old pan on the stove & place the hundi on it.
25 Mins on Low Flame and open after 10 Mins.
