Spring makes cooking in the porch more enjoyable for me, because the weather changes constantly between cloudy, rainy, and sunny moments.
I’ve decided to make either Shami Rashti or Shami Pouk for Iftar. Shami Rashti is an authentic Gilani dish usually prepared during Ramadan and served with bread, cheese, and herbs. Besides being delicious, it’s also very nutritious and can keep you full for hours.
One of the great features of this dish is that you can prepare it in large quantities, portion some of it, freeze it for up to three months, and whenever you crave it again, take it out of the freezer and add eggs to it and fry it.
