The hot and fast pulled pork method will shave hours off your cook time and give you that same taste you know and love!
Ingredients
* 1 pork butt (about seven pounds)
* 1/8 Cup spicy brown mustard
* 1/4 Cup your favorite rub/seasoning
* 1 Tbsp teriyaki sauce
* 1/4 Cup orange juice
Instructions
1. Preheat grill to 325 degrees with cherry wood over indirect heat. Spread spicy brown mustard over all sides of pork butt. Apply seasoning on all sides after.
2. Place pork on grill for three hours or until internal temp of meat reaches the 160s. Mix orange juice and teriyaki sauce into 9×11″ foil pan. Place pork butt in pan and wrap with foil. Put back on grill until internal meat temp reaches 203 degrees.
4. Remove from grill, unwrap, and let rest for 30-45 minutes before shredding.

Iโm entering in my first BBQ competition and was worried about not having enough time using the low and slow method like I always do. Iโve got 24hrs from the time I get the meat to the time I have to serve it. Iโm gonna do a test run with this method hopefully in a few weeks if it ever stops raining lol. Was concerned it wouldnโt turn out as tender as I normally make itโฆIโll post an update shortly ๐ค๐๐ค
Why not finish in your oven. No sense waiting pellets or wood. Cooks faster and easier to control cooking temp.
Can do this with a brisket too. 350 for about 2-2.5 hours until you like the look of the bark, wrap with some broth until 210 and rest. Can get it done in 5 hours or so ( not including rest) and it turns out great. Watch Kosmo Qs original video for more info ( search hot and fast brisket).

Used this method and they were perfect the family loved it, except when I covered it, i put bbq sauce and butter on it.
